Just like the rest of America, I occasionally indulge on my sweet tooth and eat lots of candy. If you know me, I’m a sucker for chocolate —it’s my weakness! But this recipe of mine has come in handy after an overindulgent weekend of unhealthy food consumption! This recipe cleanses my palate and helps me detox my body when I don’t feel so good after eating a lot of sweets!

Weekday Earth Detox Soup

This detox soup is loaded with all the healthy wonders of broccoli. Broccoli is probably the greatest detoxifier that grows on earth. It’s loaded with copper, selenium, and zinc, giving you the welfare your body needs. So please, try this recipe and give your body a healthy dose of the earth!

egg free | dairy free | nut free option: omit pine nuts



2 heads of broccoli

(including stems)

2 whole garlic cloves, chopped

pinch of sea salt

pinch of ground black pepper

2 tablespoons olive oil

1 medium onion, diced

3 cups vegetable broth

1 (15 ounce) can low sodium cannelloni beans

⅓ cup coconut milk

4 lime wedges (optional)


Preheat oven to 400 degrees Fahrenheit. Chop the broccoli (save the stems!) into florets and place on a baking sheet with chopped garlic, sea salt, pepper, and 1 tablespoon olive oil and roast for 15 minutes. Meanwhile, with a peeler, peel the broccoli stems and chop into small pieces. Heat the remaining 1 tablespoon olive oil in a medium saucepan over a medium heat. Add the chopped onions and broccoli stems, cover, and cook for 5 minutes. Add the vegetable broth and beans, cover, turn heat to low, and simmer for 15 minutes. Add the roasted broccoli and garlic to the saucepan and stir with a spoon to mix all ingredients together. Next, transfer to a high-speed blender and blend until smooth. Return back to the saucepan and add the coconut milk. Garnish with lime wedges and serve warm.
