Lemon Quinoa Salad

Sima's Lemon Quinoa with Artichoke Hearts, Garbanzo Beans, and Sima_s Detox Vinaigrette

Serves: 2
Prep: 10 minutes
Cook: 15 minutes
– 1 cup Melissa’s Organic Red Quinoa, cooked
– 1 cup garbanzo beans
– 1 tsp lemon zest
– 1/2 package of Melissa’s steamed artichoke hearts
– 1 clove garlic, minced
– 1/4 apple cider vinegar
– 3 tbsp fresh lemon juice
– 2 tbsp sweetener of your choice
– 1/3 tbsp extra virgin olive oil or avoado oil
– 1/2 tbsp mustard
– a pinch of sea salt and black pepper
1. Mix together your ingredients and serve on two plates.
2. Add all ingredients to a high speed blender and blend for 1 minute or whisk for 2 minutes.
3. Store in an airtight container. It will stay fresh for up to 3-5 days.
