Ingredients:
• 1 lb extra lean ground beef Substitute 1lb for lean ground turkey (optional)
• 1 C cooked quinoa
• 1/2 C fresh parsley, chopped
• 3-4 cloves garlic, minced
• 1 small onion, grated
• 2 Tbsp. ground flax seed
• Salt and pepper
• 1 package whole wheat noodles (cooked according to package directions)
Method:
1. Preheat oven to 425 and line a baking sheet with foil. Coat hands with olive oil.
2. Combine all ingredients in a large bowl and mix well using your hands. Make 2” balls and
set on baking sheet.
3. Bake for 20-30 minutes before serving on top of noodles.
