Gluten Free, Asian Soba Noodle & Vegetable Soup


Gluten-Free Asian Soba Noodle

• 6 oz. soba noodles
• 1 medium onion, chopped
• 2 Tbs olive oil
• 24 oz. vegetable broth
• 4 baby bok choy, cut small
• 3 sticks celery, chopped
• 3 Tbs tamari sauce
• 2 carrots, chopped
• 3 cloves of garlic, chopped
• ½ teaspoon cayenne ( more if you like it spicy)
• Pinch of sea salt

1. In a large pot, bring 3 cups of water to a boil. Add a pinch of sea salt and soba noodles.
2. Boil for 7 minutes. Drain noodles and set aside.
3. In another large pot, sauté onions and garlic in olive oil for 5-7 minutes.
4. Add to the onion-garlic mixture: vegetable broth, carrots, bok choy, celery, tamari sauce,
noodles, and cayenne.
5. Bring the pot to a boil uncovered, then cover and simmer for 15-20 minutes
