Spice Pumpkin Latte: Christmas in July


A rich holiday pleasure! I gave this traditional recipe my TRANSFORM makeover, so that you can enjoy this holiday treat, minus the fake ingredients, and the pound of sugar that is plentifully added when you purchase it at your local coffee shop. This delicate drink has the name holiday stamped all over it. Pumpkin is high in fiber, rich in vitamins, and is famous for its support of your digestive health system and immune system.

Serves: 2

Prep time: 5 minutes

Cook time: 0 minutes


1 cup fresh brewed coffee (hot)

1/2 cup coconut milk ( full fat)

2 Tbsp. Pumpkin

1 vanilla bean ( or few drops of best quality vanilla extract)

1/8 tsp fresh ginger, chopped

Pinch of cinnamon

Pinch of cardamom ( optional)

1. In your high speed blender or vitamix add all ingredients for about 2 minutes until smooth.
2. Serve in 2 coffee mugs and top with extra cinnamon.
